Chef Uwe Micheel is the President of Emirates Culinary Guild and Director of Kitchens at Radisson Blu Hotel, Dubai Deira Creek.
The German born, award winning 5 star Chef has more than two decades of experience as a Chef in Dubai and a huge list of credentials to follow his name. Dubaimoms.com had an opportunity to catch up with him at the Dubai Food Carnival, a two day food fiesta that took place on the 21st and 22nd February 2014. Chef Uwe Micheel shared with us some interesting thoughts and tips for modern day mothers.
What do you think are the most essential gadgets or items a modern day mother should have in her kitchen?
Personally, for me, having the right pots and pans is very important. I would always invest and also advise others to buy good quality pots and pans rather than save money on cheaper and not so reliable ones. It’s also wise to put money on good quality knives as they stay with you for years to come. I still have a knife that belonged to my grandmother! Having a good knowledge about the various types of knives and their specific usages will also help you cook faster and far more efficiently. If you do not know how to use a knife the right way, it will not serve the purpose.
Would you like to recommend some ingredients that every mother should stock up in her kitchen or refrigerator to make a quick snack/meal for her kids?
Well, a lot depends on their personal likes and dislikes, but if I have to name some, I would say Potatoes, Onions, Garlic and Ginger. They are all so versatile; especially garlic and ginger are great for seasoning any dish. In my refrigerator, I always keep ham, cheese, eggs, some fresh fruits and Vegetables. Bread is another thing you should be having at home all the time.
How does cooking at home differ from a chef- style professional cooking?
Professionally, It’s all about the technique, timing and presentation. Our passion for cooking comes up in what we serve. But home cooked food has its own unique flavour. I have learnt a lot of things from my mother, cooked with her and tried her recipes several times, but I still haven’t mastered the taste or flavour of her dishes. I think it’s the love and passion mothers add to their cooking that makes home cooked food so wonderfully delicious. It cannot be copied or replaced.
Do you have any message for moms who have great love for cooking but are unable to pursue their passion as a professional chef?
In my team of over 100 chefs, there are only 8 female chefs, it shows that pursuing a full time career as a professional chef is hard and it means sacrificing family time. Quite often, women give up their career once they have children. It’s a personal choice they make, in order to take care of family and children. I think to be a good mother is also a career. Mothers play so many different roles and that in itself is a big challenge. Today when I look back at the time my wife gave to our family, to raise our sons and bring them up with the right values, I feel immensely proud of her.
