Spinach Soup

Light and nutritious, Spinach soup makes for a quick and healthy winter meal. Spinach soup is also great for weight watchers. If you’re on a low cal diet, you can skip the cream or use low fat cream/milk instead.


1 large bunch of Spinach (about 15-20 stalks)
1 clove garlic crushed
½ cup finely chopped onions
6 cups vegetable stock
1 tablespoon butter
2 tablespoons corn flour
½ cup cold milk
½ cup cream
Salt and pepper to taste.

Wash spinach and roughly chop the leaves. Heat butter in a pan, add onions, garlic and sauté for 1- 2 minutes. Then add Spinach and stir fry on high heat for a minute. Add vegetable stock, cover the pan and leave it to cook on low flame for 5 minutes. Allow it to cool and then blend in a mixer to a smooth puree. Transfer the puree to a sauce pan. Combine corn flour and milk in a bowl to make a smooth mixture and add it to the spinach puree. Stir well and cook on medium flame for 2-3 minutes, stirring occasionally. You can add a little milk or stock if the soup becomes too thick. Season with salt and pepper. Stir-in the cream and serve hot with garlic bread.
