Hydrating Summer Salad

Champion the seasons fresh produce while creating a riot of colors and flavors with this hydrating summer salad. Summer is all about refreshing vegetables like cucumbers, melons, tomatoes and peppers that grow in great abundance during the season. These vegetables are jam packed with water, salts, fibre and minerals that keep our bodies cool and well hydrated to pull through the hot summer days. This crunchy and delectable salad with a hint of tangy zaatar is an easy and delicious way of incorporating water-rich veggies into your diet.

Ingredients:

3 medium cucumbers
1 yellow bell pepper
1 large ripe tomato
1 large radish
½ bunch parsley – roughly chopped
10-12 pickled green olives
1 medium shallot (optional)
Salt & pepper for seasoning
For dressing: whisk together 1 tablespoon extra-virgin olive oil, 1 teaspoon lime juice and 1 teaspoon Zaatar.

Dice all the vegetables and combine in a large bowl.  Add the chopped parsley and dressing just before serving. Toss well, season with salt and pepper (as required) and finish off with a sprinkle of zaatar on top. The salad can be served as an appetizer, and it also works great as a late afternoon snack.
