This humble Italian salad, popularly known as “Caprese Salad” is a classic combination of appetising colors and fresh flavours. This salad has minimal ingredients (just tomatoes, mozzarella and basil) and can be made in no time. It is so versatile; you can have it as an appetizer, side dish or even a whole meal! It’s a perfect snack for anytime of the day and kids love it! You can make it even more exciting for them by threading it up on skewers.
Caprese Salad tastes best when you use freshly picked local or home-grown tomatoes. So this salad is a must-make during the “tomato season” when fresh, ripe tomatoes are abundant in the market.
2 large ripe tomatoes
1 pound fresh, soft mozzarella cheese
10-15 fresh basil leaves
3-4 Tbsp extra virgin olive oil
1 tbsp balsamic vinegar
A pinch of sea salt
Freshly ground pepper
1 tbsp freshly chopped parsley (optional)
Capers for garnish (optional)
Slice the tomatoes and cheese into thin circles. On a large platter, arrange the tomatoes and cheese alternatively. Place a Basil leaf between each slice of tomato and cheese. Sprinkle salt and freshly milled pepper. Drizzle a generous amount of olive oil over the salad. Finally a light drizzle of Balsamic vinegar. If you like a little twist, garnish with chopped parsley and capers, or fresh mint leaves, dried oregano, olives or anything you like for additional flavours.
